• Rustic soup

Cod and tomato chowder 

added on 24/9/2009 by DaveLight vegetable and cod soup - ideal for lunch with nice crusty bread.


  • 3 tablespoons olive oil
  • 2 medium onions
  • 2 celery sticks
  • 2 large carrots
  • 2 large potatoes
  • 1 yellow pepper
  • Fresh thyme
  • Salt and pepper
  • Bay leaf
  • 900ml fish stock
  • 150g green beans
  • 2 courgettes
  • Few dashes Tabasco sauce
  • 600g cod fillets
  • Flat leaf parsley


  1. Cut all the veg up into small-ish bitesize chunks.
  2. Heat oil in heavy frying pan; add onions, celery and some seasoning and cook until soft (about 8 minutes).
  3. Add carrots, potatoes, yellow pepper and herbs; cook for 5 minutes until soft.
  4. Add tomatoes and stock, simmer for 10 minutes.
  5. Add green beans and courgettes and cook for another 3 minutes; check the seasoning and add Tabasco.
  6. Lay the cod fillets on top of the pan and simmer for 3 minutes or so until the fish is just cooked.
  7. Add parsley and serve.
