added on 24/7/2010 by DaveA beetroot soup that I blitzed but apparently should be more like a chunky stew (the Russians at work assure me of this).


  • 2 onions
  • 4 potatoes
  • 2 carrots
  • 1 parsnip
  • 4 beetroots
  • large shake of carroway seeds
  • 1 red cabbage
  • 2 large tomatoes
  • 2 garlic cloves
  • Chicken stock


  1. Sweat the onions in butter until soft
  2. Dice the potatoes, carrots and parsnip; add to the pan and continue to cook for 10 minutes or so
  3. Add the caroway seeds
  4. Peel and grate the beetroot and add to the pan
  5. Finely chop the red cabbage and add that as well
  6. Add enough stock to cover the vegetables
  7. Simmer for 45 minutes to an hour
  8. Add the garlic and chopped tomatoes towards the end
  9. Finally, blitz and seive if you want to upset the Russians


Use a large pan!
