Beef carpaccio 

added on 20/8/2010 by DaveI've tried a few recipes for carpaccio, including one that involved par-freezing the beef. None of them worked! This one, however, does work.

Ingredients

  • Good beef fillet
  • Lemon
  • Extra virgin olive oil
  • Salt and pepper
  • Parmesan

Method

  1. Slice the beef thinly
  2. Place each slice between two sheets of clingfilm
  3. Bash the beef with the end of a rolling pin until it is very thin (you should be able to see light through it when you hold it up)
  4. Place on a plate and drizzle over a dressing made from the lemon, olive oil, salt and pepper
  5. Serve with salad and large slices of paramesan
