• Chilli prawns

Prawns with chilli, garlic and lemon 

added on 1/10/2010 by DaveA quick and tasty way to cook prawns. You'll need to get some nice raw prawns. I got some from Fishworks after my cooking course but I can't remember the name of them now.


  • 12 large king prawns with shell and head on
  • 2 fresh red chillis
  • 2 garlic cloves
  • 1 lemon
  • Chopped parsley
  • Good olive oil
  • White wine


  1. Remove the head from each prawn, leaving the shell on; put the heads to one side
  2. Heat a large frying pan with oil
  3. Add the prawns flat in the pan
  4. After a minute or so add the garlic and chilli. They will both cook quickly so keep a close eye, especially on the garlic
  5. After a couple of minutes, add a splash of white wine (maybe a glass or so)
  6. Squeeze the brown meat out of the prawn heads into the pan to thicken the juices (and make it go a lovely red colour)
  7. The prawns should cook within 3 or 4 minutes; once cooked remove from the heat
  8. Squeeze in the lemon juice and add parsley
  9. Serve


These can be a slight pain to eat due to the fact that the shells are left on; but they are worth it. Squeezing out the heads is a top tip!
