Mackerel with cucumber and lime 

added on 18/12/2012 by AdminFresh mackerel is one of my favourite fishes. The dressed cucumber helps to balance the richness of the fish and the chips add sweetness to the dish.

Ingredients

  • Mackerel
  • Cumin
  • Cucumber
  • Spring onion
  • Lime
  • Soy sauce
  • Coriander
  • Sweet potato
  • Cumin
  • Smoked paprika
  • Olive oil

Method

  1. Peel and chop up the sweet potato into chip shapes
  2. Toss the chips in a bowl with some olive oil and about 1 tsp each of cumin and smoked paprika (and maybe a little cinnamon)
  3. Plate on a baking tray and roast in the oven at around 180C for 45 minutes
  4. Fillet the mackerel, brush with olive oil and sprinkle with cumin
  5. Use a peeler or cheese slicer to make thin ribbons of cucumber, stopping when you get to the seeds
  6. Thinly slice the spring onion and add to the cucumber
  7. Squeeze over 2 limes and some dark soy sauce
  8. Pan fry the mackerel, starting skin side up, and cooking this way until pressing with your thumb on the skin leaves an imprint - only then flip over to finish on the skin side (this avoids the skin curling up when you cook it on that side)
  9. Add chopped coriander to the cucumber and toss it all together just before plating up, serve with the sweet potato chips

Notes

Use as much or as little as you want of each ingredient for the salad; see how it tastes and adjust as desired.
