• Chrimbo gingerbread

  • 125g unsalted butter
  • 100g dark muscovado sugar
  • 4tbsp golden syrup
  • 325g plain flour
  • 1 tsp bicarbonate of soda
  • 2 or 3 tsp ground ginger

  1. Put the oven on at 170C
  2. Place baking paper on a baking sheet or two
  3. Melt butter, sugar and syrup in a pan
  4. Sift the flour, bicarb and ginger into a bowl
  5. Add the melter stuff and stir in to form a wet dough
  6. Roll out (I didn't use any flour, the dough is quite greasy) to about 6 or 7mm
  7. Cut out shapes and place them on the baking paper - they don't need to be too far apart since they won't spread much
  8. Bake for about 8 to 10 mins - they really don't take long
  9. Once cooled, decorate with icing from tubes that's easy to draw on!

The dough is very wet but is quite easy to handle. If you have a smooth work surface you can probably just skip using flour, or use just a little bit. Be careful when lifting the shapes onto the baking sheet to avoid stretching them.
